Kale: This superfood is packed with vitamin A (eye and bone health and immunity), vitamin C (immune support and chronic disease prevention), vitamin K (blood clotting and bone building) and folate (a B vitamin that fosters brain development). Mineral-rich, this leafy green contains phosphorus, potassium, calcium and zinc.
Carrots: Loaded with beta carotene, which the body converts to vitamin A, carrots contain vitamins C and K along with potassium, calcium and iron. They add fiber to this fiber-rich meal.
Tomatoes: This fruit contains the antioxidant lycopene, which reduces the risk of heart disease and certain cancers (prostate, colorectal and stomach). Lycopene enhances skin health as does the vitamin A, which aids eye health. The calcium and vitamin K boost bone health.
Hemp Seeds: Adding essential fatty acids (omega-3 and omega-6), which enhance heart health, hemp seeds are powered with protein and provide a complete source of amino acids that are needed to build muscle. They offer an abundance of vitamin E and a bevy of minerals, including phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc.
Tempeh: This complete protein made from fermented soy provides vitamin B12. Its many health benefits include improving cholesterol, lowering blood pressure and inflammation; improving bone health and insulin resistance, and helping to protect the heart.
Nutritional Yeast: A few sprinkles will add protein and a spectrum of B vitamins to your salad, especially B12 and folic acid, which aid in the production of red blood cells and maintain DNA. “Nooch” adds fiber and antioxidants, enhancing heart health, reducing the risk of diabetes and strengthening the immune system. Athletes may notice that it helps fight post-workout fatigue while reducing inflammation.
This salad is dressed with an oil-free vinaigrette. Oil is to be avoided to maintain heart health.
