Cauliflower… Crunchy Cruciferous Clouds Of Fiber

Cauliflower hoarders! All of you! And I’m not hatin’. Had to go to five supermarkets in order to find these crunchy cruciferous clouds of fiber and vitamins B and C. Cauliflower is rich in cancer-preventive antioxidants.

It is a source of choline, which enhances memory, learning, muscle movement and sleep. The vitamin K in this veggie helps strengthen bones. Aiding digestion, cauliflower’s high fiber content may assist the regulation of the immune system and inflammation.

I toss a handful of cauliflower into my smoothies (you can’t taste it) or salads.
