Every #foodfriday, I learn something new and this Friday I learned that spinach, beets and quinoa are related as members of the amaranth family. Spinach is loaded with nutrients, antioxidants and fiber.
It’s a great source of carotenoids, vitamins C & K, folic acid, iron and calcium along with many beneficial plant compounds. Among the numerous health benefits that may come from eating spinach are reducing oxidative stress, promoting eye health, fighting cancer and regulating blood pressure.
This leafy green is high in vitamin K so if you’re on blood thinners or are prone to kidney stones, you may want to stay away from it. Otherwise, eat your spinach daily in salads, smoothies or in bowls alongside a feast of other veggies and plant-powered foods.
