The Health Benefits Of Tomatoes

I remember Dad’s morning glass of tomato juice and the way he drowned his food in ketchup. He wasn’t wrong.

Tomatoes are mostly water, very low in carbs and a good source of fiber, vitamins C & K, potassium and folate. Grown in a variety of shapes, colors and flavors, tomatoes contain the heart disease and cancer fighting-antioxidant lycopene, a plant compound.

You can get the benefits of lycopene by eating the fruit (they are a fruit although commonly mistaken for a vegetable) directly or in products made from tomatoes such as in juice, ketchup, paste and sauce.

My favorite is cherry tomatoes because they’re bite sized and super easy to toss into salads raw.
