One of the proteins that we always throw into our salads is seitan. Made from the protein in wheat, gluten, seitan has a thick and chewy meat-like texture.
It is protein-packed, iron rich and contains an abundance of selenium. Easy to season, marinate, cook, steam and bake, seitan is low in carbs and fat. Use this “wheat meat” to make burgers and meatballs or toss it into stir fry, pasta and rice dishes.
While seitan is definitely NOT for anyone who has a wheat and gluten intolerance or allergy, it’s a popular substitute for those who need to refrain from soy and cannot eat tofu or tempeh.
